Banana Coconut and Choc Chip Muffins

Ingredients
  • 2 cups of self raising flour
  • 100g chocolate chips
  • ½ cup of desiccated coconut
  • ½ tsp of salt
  • 2 ripe bananas, mashed
  • 2 medium eggs
  • ¾ cup of granulated sugar
  • ½ cup of melted butter
Method
  1. Preheat the oven to gas mark 5 (190 degrees Celsius).
  2. In a bowl measure the flour, chocolate chips, desiccated coconut and salt, whisk together to combine.
  3. In a separate clean bowl, mash 2 ripe bananas and add eggs, granulated sugar and melted butter, mix thoroughly to combine.
  4. Add the wet ingredients to the dry ingredients and fold through gently, don't over work the mixture.
  5. Prepare a muffin tin with cases and spoon 1 heaped tablespoon of the mixture into each of the cases, you'll get between 12 - 14 muffins. Bake in the oven on gas mark 5 (190 degrees Celsius) for 15 - 20 minutes till golden brown, you can usually tell they're done by the wonderful aroma in your kitchen!
  6. Enjoy hot out of the oven with a hot cuppa!
