Curried Barbecue Wings

Ingredients
  • 1kg chicken wings/niblets (washed and drained)
  • 2 tbsp barbecue sauce
  • 1 tbsp ketchup
  • 1 tsp Bolsts mixed curry powder
  • 1 tsp thyme (dried/fresh)
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • ½ tsp salt
  • coriander to garnish (optional)
Method
  1. Make sure the chicken wings are washed and drained.
  2. Measure all the listed ingredients in a large bowl (no need to measure them into small plates like I have done, this was for demonstration only); 2 tbsp barbecue sauce, 1 tbsp ketchup, 1 tsp Bolsts Mild Mixed Curry Powder, 1 tsp thyme, ½ tsp coriander powder, ½ tsp cumin powder and ½ tsp salt.
  3. Mix the ingredients and coat the chicken. Bake on an oven tray in a hot oven (gas mark 5 - 6) for 30 - 40 minutes or till brown. I usually cook mine in my Phillips airfryer at 180 degrees for approximately 20 minutes which not only results in great tasting wings, it actually cuts down the cooking time by almost half as compared to a traditional oven.
  4. Garnish with chopped coriander if you wish and serve immediately. These wings are perfect for a buffet dinner alongside other dishes, Iftar, picnics or parties!
