I've been craving this for a couple of days now and just had to make it today! Jam & Coconut Sponge has to be one of my most favourite childhood school desserts, EVER! Serve with vanilla custard for a truly nostalgic treat. Recipe below, don't forget to tag me in your photos using @afeliaskitchen. Jam & Coconut Sponge You will need: 220g butter 220g sugar 4 eggs 220g self raising flour 2 tsp baking powder 200g seedless raspberry jam desiccated coconut Method: 1. Preheat your oven to gas mark 4. Begin by creaming together 220g of butter and 220g of sugar till smooth. 2. Crack in 4 eggs one by one till well combined. 3. Sift in 220g of self raising flour and add 2 tsp baking powder and mix till you have a smooth batter. 4. Line a large baking tray with greaseproof paper, my tray measured 22cm by 35cm, and pour in the batter. 5. Bake in the oven at gas mark 4 for 30 – 35 minutes or until a skewer comes out clean. 6. Allow the sponge to cool for 10 mins, while the sponge is still warm use a palette knife and spread seedless raspberry jam over the top. If your sponge cools too much or the jam is difficult to spread, simply warm the jam in the microwave and then spread. 7. Sprinkle desiccated coconut over the top and serve with hot #vanilla #custard! Iftar Table – Day 1 For iftar today we had the mandatory Kisuri & Classic Sana Biran, I also made Chicken #Pakoras and some Spicy Shredded Chicken Samosas. We had some plain #pilau leftover from yesterday's barbecue which some of us enjoyed with the #sana (#chana) and a drizzle of yoghurt and mint sauce (not everyone in my family enjoys #kisuri). We had mango and blueberries for afters. Recipes for the first three dishes can be found on the website, I will try to share the Spicy Shredded Chicken #Samosa recipe soon. Iftar Table Day 4 I kept today's menu fairly simple making my Chicken Enchilada along with some snacks the kids really wanted – potato croquettes, samosas and chicken nuggets….we also had fruits for afters and some chocolate fondue. A dear friend of mine sent some iftar round unexpectedly – she sent us chicken biryani, chana chaat and more samosas, needless to say we couldn't finish it all and there's still some food left! I've been meaning to make a drink using Rooh Afza (rose flavoured syrup) and finally did so today, I added some basil seeds to the drink, it was so cool and refreshing. My Sun's welcome home dinner! Today my eldest returned home after a three night trip away on a residential, so I had to cook his favourite dishes, #Akhni #Fulab and my Classic Lamb & Potato Curry! I also made a Classic Tomato salad to go with it. 3.Β Peri Peri Chicken

Last night for dinner I cooked Peri Peri Chicken along with Roasted Spiced Potatoes and a broccoli slaw using steamed broccoli and coating in a homemade ranch style dressing. The recipe for the Peri Peri Chicken will be up soon, please be patient in the meantime, I will share recipes for the potatoes and Broccoli Slaw here on Instagram in the upcoming days. Last night instead of pan frying the chicken in my cast iron pan, I oven baked them on a grill rack which I placed over a baking tray and baked the chicken at gas mark 7 for about 25 minutes. I then placed the baked chicken under the grill to brown and char the tops a little more, this gave the chicken the look and taste I wanted. Dinner this evening was my Spicy Peri Peri Chicken with sides of chips and mixed baby leaf spinach salad. I wanted to make bulgar/couscous as a side dish but my kids wanted chips. They ask for chips all the time πŸ™„. Thank goodness they're airfried hey! The Spicy Peri Peri chicken is a new recipe I'm testing, I marinated the chicken before I went on holiday to Morocco and cooked it this evening (they were marinated and frozen in a container)……I'm soooo pleased to say that this recipe is THE ONE, the kids loved the level of spice and said the chicken was really flavoursome, I can't wait to repeat the process and share it with you all! After having tried several times to get the balance of flavours right, I think I've finally nailed it! Butter Chicken Baguette Pizzas for an early evening snack! Comment below if you'd like me to do a recipe for this. I had these part baked baguettes sitting at home and whilst clearing out my freezer came across a tub of leftover Butter Chicken (recipe is already on the website), I used both to create these #yummy pizzas.
